1 lb. boneless pork loin, cut into ¾” cubes
2 Tbsp. taco seasoning
2 tsp. vegetable oil
8 oz. chunky salsa
1/3 cup peach preserves

Coat pork cubes with taco seasoning.
Heat oil in large nonstick skillet over medium-high heat; add pork and cook to brown, stirring occasionally.
Add salsa and preserves to pan, lower heat, cover and simmer for 15-20 minutes. Serve over rice, if desired.

Pat pork dry with paper towel.
In a small bowl, mix all rub ingredients together until well-combined and apply to all surfaces of the roast.
Place roast in a shallow pan and roast in a 350°F oven for 1 hour (20 minutes per pound), until internal temperature on a meat thermometer reaches 145°F.
Remove roast from oven; let rest about 10 minutes before slicing to serve.

4 porterhouse bone-in loin pork chops, about ¾” thick
2 Tbsp. olive oil
1½ tsp. ground chipotle chile
1½ tsp. coarse salt
Zest of 1 large orange

⅓ cup honey

In a small bowl, stir together oil, ground chipotle, salt, orange zest and garlic into a paste.
Using a rubber spatula, spread chipotle mixture over both sides of pork. Let stand for 15-30 minutes.
Heat grill to medium-hot. Place chops on grill and close lid.
Grill over direct heat, turning once, about 4-5 minutes per side, until the internal temperature of the pork reaches between 145°F (medium-rare) and 160°F (medium) on a meat thermometer.
During the last 2 minutes, brush chops on both sides with honey.
