You’ll love the aromatic spices, which are commonly found in North Indian cuisine—like kasoori methi, or fenugreek, garam masala, fennel and red chilies. Served with Basmati saffron rice, which is grown in the Himalayan foothills, prepared with real saffron threads and cooked with whole cardamom pods and bay leaves.
